Behind Evangelina’s, one chef… Coralie Vila. Aged 4, Coralie already had some strong culinary preferences... From Paris, she started at 16 as a kitchen commis in the capital palaces, including the «Plaza Athéneé»... Simultaneously, she studies and graduates in restauration and "art de la table". Dedicated to be amongst the best, she worked in the greatest places of the French gastronomy, including the "Louis XII" (Paris 6th) under M. Martinez (previously chief of the Tour d'Argent), and the "Jardin des sens" (Montpellier), lead by the Pourcel brothers. From these great names of the french cuisine, she learned the exigence and art of savour blending. Determined to perfect her training, she took at 20 the head of the "Voltaire Cosy" cuisine, then added to her experience by becoming Maître d' at one of the greatest Parisian brasserie «Le Grand Café».(Groupe Blanc) Following this, she was given the opportunity for more responsabilities at the «Petit Bofinger», another Parisian brasserie.
